This No-Bake Protein Snack recipe is easy to make, full of feel-good ingredients, and irresistibly delicious!
As a mom (now grandma), I am always looking for delicious, nutritious snacks the whole family will love. I first made these in the late 90's, back when the original recipe called for GASP, margarine, oatmeal, and nuts. They were good, but I knew they could be so much better. Over the years I've played with the ingredients, tweaked amounts, omitted stuff I didn't want in our diet while adding in better choices and I feel like I finally converted it into something irresistible!
Enter One Of My Family's Favorite Protein Snacks!
These crispy little morsels are a no-bake treat using just seven ingredients. They are so quick and simple to put together, even the littles can help!
Part of my recipe conversion included finding a protein powder that tastes fantastic and doesn't contain heavy metals or GMOs. My favorite protein powders are Balance Complete, a delicious vanilla super-food meal replacement that is both a powerful nutritive energizer and a cleanse with 11 g of protein, and 44% of the recommended daily fiber intake per serving. Pure Protein Complete (Chocolate or Vanilla Spice flavor) is the choice for those wanting higher protein content. It has a blend of 25 g of cow and goat whey, pea protein, egg white protein, and organic hemp seed protein per serving that provides a full range of amino acids. This recipe also incorporates nut butter for flavoring, added protein and to bind the ingredients. I happen to really like Almond Butter or Sunflower Butter as the taste is slightly more subtle.
I am all about the quality of ingredients to support our body systems.
The first time I added Vitality Essential Oils to the recipe, I found the missing link that brought all the flavors together and I love that they are supporting our body systems. (Please note the only essential oils I suggest using for consumption are found here.) I also experimented with different fats like coconut oil, which was the wrong consistency and a bit grainy for my taste. Next, I switched up the butter. Kerry Gold is a little more expensive but IMHO, worth every cent for the added flavor it brings to all my dishes.
The nut butter and honey are organic and the cereal I use is made from ancient grain einkorn and oat bran. Einkorn Flakes Cereal is crispy and lightly sweetened with coconut sugar which helps it to remain crispy, even in milk! It also has higher levels of protein, trace minerals, and lower gluten levels than hybridized, modern wheat.
I particularly like that the einkorn is grown by artisan farmers who use traditional methods. For all of us who support traditional farming and non-GMO crops, this is perfect.

Make these tasty morsels ahead of time and keep a batch, (ahem, or 2) in the freezer. They are great for serving up as a quick treat when the neighbors pop over or are a delicious addition to a Sunday brunch. I love them fresh out of the freezer for an icy cold treat on a hot day or when you're craving a sweet, crunchy treat!
I don't recommend letting them sit at room temperature as the ingredients soften and they just taste best when chilled.
Blonde Bombshells
Ingredients:
¼ C Honey
3 T Butter
¼ C Nut Butter (I use Almond or Sunflower)
2 Scoops Balance Complete or Pure Protein Complete Powder
2 Drops Thieves Vitality Essential Oil or Orange Vitality Oil
Directions:
Melt butter, add honey and Nut Butter and Protein Powder. Mix till combined, add Cereal. Mix till combined. Line a baking sheet with parchment paper, drop Bombshells mix by the teaspoonful, or roll into balls. Place baking sheet in the freezer or refrigerator till firm. Yields 24 to 36 pieces depending on the size you roll.
Best Served Chilled ~ enjoy!
