Amazing Peach Blueberry Gluten Free Dairy Free Truvani Protein Pancakes

Before I switched to a gluten-free, no-dairy diet, I loved to eat pancakes for breakfast.  It's definitely a morning food that I miss, and after trying many different recipes out there, and not tasting one that was satisfying or filling, I created my own!  There was a lot of trial and error that went into this recipe, but I finally have the perfect, fluffy, deliciously satisfying protein-rich morning breakfast staple recipe! 

This recipe makes enough for 5 large pancakes (for me, this is a great prep-ahead recipe that makes enough for 5-morning meals).

Ingredients:

  • 1 scoop of Truvani Protein Powder.  I used Truvani Vanilla Protein Powder
  • 1.5 cups Oat Flour (not packed down) - you can make your own oat flour or buy it here: Bob's Red Mill Gluten Free Oat Flour
  • 1/2 tsp Sea Salt
  • 1.5 tsp Baking Powder
  • Dash of Cinnamon (I added 1 tsp because I love cinnamon. You can also use 1 drop of Cinnamon Bark Vitality Oil from Young Living )
  • 1.5 cups fresh or frozen peaches thawed and softened
  • 1 tbsp Olive Oil (or coconut oil)
  • 3 eggs
  • 1 cup Oat Milk (or any dairy-free milk)
  • 1 tsp Vanilla
  • Syrup: 3/4 cup Wild Maine Blueberries per serving

Recipe:

  1. Thaw frozen peaches or heat them until they are no longer frozen and softened. You can also use canned peaches but strain the liquid.  It's okay to use the small amount of juice that frozen peaches will give off as they thaw. 
  2. Mix together all the dry ingredients and combine with the wet ingredients.  Add the peaches and gently fold them into the batter.  Allow the batter to rest for 5-10 minutes while the oat flour absorbs the liquids.  
  3. If your batter is too stiff, add a little more oat milk or some water to make it slightly runny. 
  4. Cook them on a griddle and store them in an airtight glass or ceramic container for up to 5 days.  My favorite food storage containers are: Ceramic Nesting Bowls Set of 4

Blueberry Syrup

  • Heat the Wild Maine Blueberries over the stovetop or in the microwave until they form a liquid.  Pour that over your pancakes. 
  • Optional: for added sweetness, add 1 tbsp honey or real maple syrup.
