St. Patrick's Day Copy Cat Chocolate Peppermint Patties Candy Recipe
I love peppermint patties, but being fussy about the ingredients I eat, I haven’t had one in years.  I stumbled upon several copycat peppermint patty recipes online but noticed many different variations to make these.  So I decided to do what I always do, I found several recipes using ingredients I prefer to use, and then tweaked them by taking ideas from each one to make my own version.  I love to experiment this way!  Most times, it comes out successfully… and sometimes, well…. we just won’t go there.

For this recipe, I found that you must use softened butter and NOT melted.  The first time I made it, I softened my butter in the microwave which made it partially melted.  This created a very crumbly dough that wouldn’t stick together.  Softened butter at room temperature will help make your dough stiff enough to roll into a log and hold its shape.  If you do find that your dough is too sticky, then add a little confectioner’s sugar until you get the desired consistency.

Another tip- I added a flat ice pack under the wax paper that held the dough slices that were waiting to be dipped into the chocolate.  This kept the slices chilled and “hard” which made it easier when dipping into the chocolate.  Just so you know, I earn a small commission for items ordered through links posted in this article.

I didn’t see any recipes calling for vanilla extract, but I personally LOVE adding vanilla to just about everything I bake- so it’s completely optional if you want to add vanilla extract or natural vanilla paste like this: Natural Vanilla Bean Paste

For this recipe, I used Young Living’s Peppermint Vitality Oil which is compliant to FDA regulations to market for cooking and dietary use.  All vitality oils sold by Young Living are labeled for dietary use but contain the exact same oil as its colored labeled counterpart.  They are great to use in cooking but know that they are extremely potent because of their high quality and the fact they are completely pure oils (nothing is added to them like alcohol such as with peppermint extract).  As a result, you’ll only want to use a few drops. 

If you like your Peppermint Patties to be intensely “minty” in taste, then use

8 drops Peppermint Vitality oil 

 If you want more of a subtle “hint of mint” taste, then use fewer drops- such as only 5-6 drops Peppermint Vitality oil

Peppermint Vitality oil is beneficial to aid in improved digestion.  Adding a drop of peppermint vitality to your water or tea when you feel slight stomach discomfort after overeating a rich meal, might do the trick at easing your unhappy stomach.  I personally rub one drop clockwise over my stomach and it helps – rather quickly- reduce bloating due to gas.  It is also a great oil to use to help you “go”.

Peppermint Patties Recipe

2.5 cups powdered sugar

2 tbsp butter softened at room temperature (NOT melted)

2 tbsp cream or 2% or whole milk

8 drops Peppermint Vitality Essential Oil

10 drops Vanilla Extract (optional)

12 oz. chocolate chips – I prefer dark Ghirardelli’s dark chocolate morsels like these: https://amzn.to/38VEO6h   I also added in a few Bakers Unsweetened 100% cacao squares (I use these Baker's 100% Cacao No Sugar) to reduce the sugar and I like mixing chocolate together for a richer taste, but it's not necessary.  Keep your total chocolate amount to 12 oz.

 

 

Step 1:  mix together the powdered sugar, butter, peppermint vitality oil, vanilla extract (optional) and cream using a paddle attachment on your mixer (like this attachment-

on low setting and gradually increase to medium speed until stiff dough forms (like playdoh).  Do not use melted butter or your dough will be crumbly.

 

Step 2: divide dough in half and roll into two logs and wrap each log separately in cling wrap, parchment or wax paper and store in the fridge for 1 hour or until dough is chilled.  I love using Parchment paper for baking and cooking!

Tip- slice your young living essential oil cardboard tubes lengthwise (that ship to you in the mail to protect your oils) and nestle the wrapped dough inside the tube to prevent the sides from getting flat.

Step 3:  Slice logs into ¼ to ½ inch slices

Slowly melt chocolate (I used a 2 cup glass dish).   Using a toothpick, dip each circle into melted chocolate.  Set candies on parchment or wax paper to cool.

 

Store in an airtight container or in the refrigerator (they taste heavenly cold!).  Makes approx. 36 patties.  Yum!
